Following through on a new years resolution

One of the few creative things I can do is cook and bake, and tend to make things up as I go along. Here is my attempt to document my creativity.

Chicken Tortilla Stew


The no research, this is what I had to work with in my house, no grocery run soup that turned into a stew.

drizzle of olive oil - about 2 tbsp worth
1 large onion
3 carrots peeled and diced
3 stalks of celery, trimmed and diced with leaves
4-6 cloves of garlic, minced
6 whole dried chilis chopped and include seeds
2 palm fulls of chili powder

1/4 box of red pepper and tomato soup - Trader Joe's
1 can corn drained
1 can black beans drained
1 can diced tomatos - undrained
1/4 rotissere chicken, no skin, shredded
7 corn tortillas cut into mini squares ( cut length wise strips, then width)

shredded cheese to top

Drizzle couple tablespoons to of olive oil to coat the bottom of soup pot. Place on low heat. Dice onion then add. Add carrots and celery when chopping complete. Season with salt and pepper. when veggies are tender, add box of broth. Then add the chilis and chili powder. Cook until veggies are soft (be sure to taste). Ladel out half the mixture into blender. Blend on low until fully smooth. Pour into a seperate bowl. Blend the other half of the soup. Pour back into the blender. Pour the soup in the bowl back into the pot with the 1/4 box of soup. Turn heat to medium.

Add the corn, beans, and tomatos. Add the chicken and make sure the chicken is heated through. Then finally add the tortillas and stir thoroughly. heat for a few minutes. Serve with shredded cheese individually in bowls.
